Cinnamon Cereal Snack Bars

Cinnamon Cereal/Snack Bars Low Carb
I've been racking my brain to find something that I can
  • snack on while studying
  • have for breakfast without waking everyone up
  • can travel well if needed
This bars seem to work really well for all of those things and they taste good. They store well and would be more self stable if I had used coconut oil instead of butter, but with the amount of almond flour I am more comfortable storing these in the refrigerator than in the cupboard for extended periods of time.

If you are following Trim Healthy Mama like I do then these bars are considered an S meal/snack.


Cinnamon Cereal Snack Bars

Printable Recipe

3/4 cup Almond flour/meal
1/2 cup Coconut flour
2 TBS Oat Fiber
1/2 tsp Ground Cinnamon
4 TBS Softened Butter/ Coconut oil
1/3 cup THM Sweet Blend or Pyure Organic Stevia
2 Eggs
1 tsp Vanilla extract
1/2 tsp salt
1 Cup Cinnamon Jelly or Slim Belly Jelly (page 411)

 
In a large bowl, mix almond flour, coconut flour, oat fiber and cinnamon until well combined.

 In another bowl, cream together the butter or coconut oil, sweetener, eggs, vanilla and salt. 

Add the dry ingredients into the wet until well combined.  

Chill in the fridge for at least 20 minutes for easier preparation.



Preheat your oven to 325 degrees F. 
 

Place 1/2 the dough onto 1 piece of parchment and top the dough with the other piece of parchment. 
Roll out until a rectangle that is about 1/4 inch thick. 

Cut into small rectangles about the size of a cereal bar. Place 1 TBS jelly or a few berries onto the middle of half of the rectangles. 

Gently cover the jelly topped rectangles with a piece of dough without the jelly.
Seal the edges with a fork or your finger. 

Place the parchment onto a cookie sheet and bake for 15-18 minutes or until golden brown.


This should make 6 bars.

Flavoring My First Batch of Kombucha Tea



    My Kombucha tea is ready for some flavoring, mind you it is drinkable at this stage of fermentation but I like fruity teas better than unflavored ones.
   
     I fermented my first batch for a about 21 days, I know that seems like a long time, but considering I have a sugar free lifestyle, I wanted to make sure that the sugars had been eaten up before consuming any.

 

    The first thing I noticed when decanting my brew into a sterilized mason jar was that it had lots of bubbles. YAY for bubbles, which seems to be the one thing that most new brewers like me can't seem to make happen.

    I put 2 Tablespoons of raw strawberries into a 1 quart mason jar and filled it with Kombucha leaving a 1" headspace and am letting it sit at room temperature for 2 days.

Yummy in My Tummy Turmeric Tea

Tumeric Tea, Low Carb Trim Healthy Mama Friendly


     I have always had an issue with inflammation. I was diagnosed with rheumatoid arthritis when I was 12.  When my dad passed in 2012 my oldest brother was staying with us through the funeral services. Steve likes to cook and he gets creative to the point of “that’s scary” quite often. So when he started looking through the spice cabinet while cooking I got a little scared. Thankfully that meal was only for him as it was a curry and no one else cares for them.
     While he was looking through the spices he started talking to me about the health benefits of each one. When he found the turmeric he told me that this was one that I needed to work more into my diet. Of course I asked why, and he shared with me that it helps with inflammation and cold relief as well as a bunch of other benefits.
     I had forgotten about that conversation until I was floating around on pinterest as so many of us do and there was a glass of “golden milk” on my screen. I clicked on it to see what it was and was surprised to see that it contains turmeric. Then when I started following TrimHealthy Mama they came out with the Singing Canary…. I tried it to curb a craving for orange juice.  So then I went searching for the specific benefits of turmeric and wow did I find a lot. I also found a bunch of recipes for Turmeric Tea …
     I made a couple of them and wasn’t impressed until I started changing ingredients around… This is my version of Turmeric Tea.

Turmeric Tea

Printable Recipe

    8 ounces (1 cup) almond or coconut milk
    1/2 teaspoon turmeric
    1/2 teaspoon ground ginger
     1/8 tsp ground black pepper
    1/2 – 1 teaspoon sweetener
    1 teaspoon MCT oil, coconut oil or butter 

Instructions:
Gently warm the almond milk on the stove.
In a mug, combine the remaining ingredients.
Drizzle a teaspoon of the warmed milk into the mug and mix until the liquid is smooth. 
Then incorporate the rest of the warmed milk.
